[spacer height=”20px”]Light cherry red in colour leading to an expressive nose of strawberry, touches of black currant, rich cream and a lift of spring flowers. Full and rich on the palate with layers of flavour including red cherry, cocoa and coconut with the spice of cinnamon and cloves contributing to the complexity of the wine. Long and textural layers to match a variety of cuisines.

[spacer height=”20px”]The Pinot noir fruit in the Greystone Rosé is 100% estate grown from clone 115. Planted on the North-west slopes capturing all day sun, the fruit ripens with an abundance of flavour. Extensive shoot and fruit thinning throughout the growing season ensured small intensely flavoured and healthy fruit went to the winery.
Harvest date: Hand-picked from 21 March to 11 April 2016
Variety: Pinot Noir 100%

[spacer height=”20px”]WINEMAKER’S NOTES
[spacer height=”20px”]Pinot noir was hand-picked and gently pressed before transfer to old French barrels for wild fermentation. Eleven barrels fermented over several months with no additives at all. Experimenting with new techniques, the barrels were aged underwater through Spring and early Summer over which time wild malo-lactic fermentation started. The underwater fermentation is designed to protect from oxidation and enable the richness of secondary ferment and the completely dry finish.
